I think the argument for Israel being an Apartheid State only works, if you consider Gaza and The West bank to be a part of Israel proper, in which case, you're saying its a 1 state solution. Under that logic, there might be an argument, but in reality, Gaza and The West Bank, are meant to be the foundations of an Arab State, i.e the 2 state solution, and the restrictions of travel for Palestinians living in those territories vs Arab-Israeli's living in Israel, is more akin to strict international borders. Now its worth noting that because the 2 pieces of land are disconnected, there's a need for easy access between the West Bank and Gaza (something akin to the Fly By's in The West Bank, or something like the Kaliningrad Highway that connects The Kaliningrad Oblast to the rest of Russia), but that is still disregarding the bigger discrepency of what actually is an Apartheid State. Arab Israeli's have all the same rights and Jewish Israeli's, which is not the case for most of the middle east that actually restricts the rights of non-muslim minorities within their borders. Palestians living in Palestinian territory, who dont have Israeli citizenship, in turn, arent granted the same rights as Israeli citizens, but by that logic, every country in the world is an apartheid state for not allowing non-citizens the same rights as citizens, but its easier to just use buzzwords and pretend Israel is the worst country in the world, than use any kind of critical thinking for a few moments, so whatevs.
