Balsamic Glazed Steak Rolls Tender steak rolls filled with zesty vegetables and drizzled with a glaze that is simply out of this world delicious. Ingredients 8 thin slices sirloin or flank steak (length and width according to personal preference) Extra virgin olive oil Salt and freshly ground black pepper Fresh rosemary, chopped 1 red bell pepper, sliced into thin strips 1 green bell pepper, sliced into thin strips 1 medium zucchini, sliced into thin strips 1 medium yellow onion, halved and then thinly sliced A few white button or cremini mushrooms, cut into thin strips For the Rosemary Balsamic Glaze: 1 teaspoon extra virgin olive oil 1 large clove garlic, minced ¼ cup dark balsamic vinegar 2 tablespoons dry red wine 2 teaspoons brown sugar 2 sprigs fresh rosemary ¼ cup Progresso™ beef flavored broth Directions Rub each side of the steak slices with a little extra virgin olive oil. Sprinkle with salt, freshly ground black pepper and some chopped fresh rosemary. Heat one tablespoon of extra virgin olive oil in a skillet over medium-high heat and cook the vegetables until crisp-tender, seasoning with salt and pepper. Place a few of the vegetable strips vertically on one end of each steak cutlet so that once rolled up the end of the vegetables are sticking out of each end of the steak roll. Roll it up, and secure it with a toothpick. Repeat for each steak roll. For the rosemary balsamic glaze: Heat the olive oil in a small saucepan over medium-high heat. Add the garlic and cook for one minute, until fragrant. Add the balsamic vinegar, red wine, brown sugar and the rosemary sprigs and bring to a rapid boil. Reduce the heat and simmer uncovered for 5 minutes. Add the broth, return to a boil, reduce the heat to low and simmer for another 15 minutes. Discard the rosemary sprigs. Prepare the grill and grill on each side for about 2 minutes or according to desired doneness. Do the same if cooking them in a skillet, frying over medium-high heat until done. Serve immediately drizzled with the rosemary balsamic glaze. Baked sweet potatoes make a great accompaniment.
I made a huge pot of my favorite vegan cheese sauce! This stuff is amazing! Just look at how thick and creamy it is. ☺️💖 You can add it to macaroni pasta, or add in some peppers and tomatoes for a queso! 🙌🏼✨ It’s oil-free, nut-free, and gluten-free goodness!!!! 💛 Vegan Cheese Sauce: 4 cups peeled & diced potatoes 2 cups diced carrots 1 cup nutritional yeast 2 cups water (or non dairy milk to make it extra creamy) 2 tbsp garlic powder 1 tbsp cayenne powder Dash of parsley Dash of tumeric 2 tbsp soy/tamari sauce (add more to taste) Salt & pepper to taste Boil potatoes & carrots until cooked through, and add into blender with all other ingredients. Transfer to pot and warm on med/low for about 15 minutes so the flavors can blend. Add more liquid to desired consistency. Mix in any extras for queso, like diced tomatoes, green chiles, roasted jalapeños, and onions. The only carbs in this pizza are from the tomato sauce. The crust? Chicken.
Crust
2 chicken breasts
1.5 cups shredded mozzarella
2-4 cloves chopped garlic (I like mine really garlic-y, so I used about 4)
Pizza Top
4-5 tablespoons tomato sauce of your choice (I try to keep it as low in carbs as possible)
Shredded mozz
Pepperoni
.5 cup ground italian sausage (I freeze the left-over sausage either for breakfasts or for pizzas in the future)
(or whatever toppings you fancy)
- Preheat your oven to 375 F. Boil your chicken in a pot of water for about 25-30 mins, until chicken is fully cooked. Run the cooked breasts through the food processor, blender, or chop with a knife until it resembles “meal” or dense crumbs. Do the same with the shredded cheese. Combine the chicken and the cheese and press in to an oven safe pan (I used a 10 in. spring form pan, but an 8x8 square pan could work too), forming a crust. Sprinkle the garlic over the top of the crust. I promise you, it won’t burn in the oven, and it smells amazing. Bake this crust for 20 minutes.
Meanwhile start cooking your italian sausage. I cooked it in a pan until it was just browned, because it will continue cooking in the oven later. After your crust is done spread your sauce around, add sausage, cheese and pepperoni any way you like, and continue baking for another 20 minutes.
Let cool and serve.
Seriously, this is so delicious.
