A look back at 60 days of sun replacement therapy in the form of yellow food consumption
Our bellies remained white
Anton discovered the joy of baking
I explored the limits of pancake production, both savoury and sweet
We both developed a taste for cod liver oil
All in all, a successful undertaking
Day 60 - Lunch
Final meal of the project, and the most elaborate. Sourced from the delicious offerings at Gló restaurant, Reykjavik.
Vegetable lasagne served with apple and carrot slaw, brown rice salad, potato salad and a side of hummus. All the yellow spectrum covered on one plate.
Day 59 - Dinner
Carrots. Boiled carrots.
Day 59 - Lunch
Swedish bread toasts from Bonus. Consumed in an attempt to calm the hangover queasiness.
Ineffective.
Day 58 - Dinner
Apple oatmeal loaf. Enjoyed after an 8hr bus ride from Olafsfjordur to Reykjavik.
Day 58 - Breakfast
Oatmeal porridge with honey.
GOOd riddance.
Day 57 - Dinner
Yellow split pea, red lentil and turnip curry with turmeric-spiced rice and single corn cob. Diluted with homemade ginger beer.
Day 57 - Lunch
Turmeric spiced rice with assorted mushrooms and smoked salmon slivers.
Sea starch side by side.
Day 57 - Breakfast
Apple and banana wholewheat pancakes.
Stacks of fun.
Day 56 - Dinner
Broad bean, lentil and turnip soup with mushroom stock base.
Day 56 - Lunch
Oven-baked potato fries with various salts.
High carb low effort mild enjoyment.
Day 56 - Breakfast
Wholewheat banana pancakes with orange marmalade.
Gooey awakenings.
Day 55 - Dinner
The Listhus resident artists were invited to dinner at the house of Iceland artist, Aðalheiður Sigríður Eysteinsdóttir, in Siglufjordur. We enjoyed a delicious three-course feast whilst wearing black out goggles.
A meal of mystery colours.
Day 55 - Lunch
Coconut turmeric rice with chickpeas and boiled egg.
Yet another yellow rice variation. Starch, diversified.
Day 55 - Breakfast
Oatmeal porridge with banana and honey. Fish oil accompaniments.
Day 54 - Dinner
Listhus resident artists converged on the only restaurant in Olafsfjordur for a pizza and fries feast.
