Trader Joe's jackfruit is used to make a quick and tasty taco filling that is a plant-based take on traditional carnitas.
Ingredients: 1 can Trader Joe's Jackfruit, drained and shredded. 1 tablespoon olive oil. 1 onion, finely chopped. 3 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon smoked paprika. 1/2 teaspoon chili powder. Salt and pepper to taste. 1 cup vegetable broth. Juice of 1 lime. Corn tortillas. Toppings: diced tomatoes, shredded lettuce, avocado slices, cilantro. Optional: hot sauce, vegan sour cream.
Instructions: Set the pressure cooker to saut mode and heat olive oil. Add chopped onion and garlic, saut until softened. Stir in shredded jackfruit, cumin, smoked paprika, chili powder, salt, and pepper. Cook for 2-3 minutes, stirring occasionally. Pour in vegetable broth and lime juice, mix well. Close the pressure cooker lid and set to manual high pressure for 8 minutes. Once done, release pressure naturally for 5 minutes, then quick release. Open the lid and use a fork to shred any remaining large pieces of jackfruit. Serve the jackfruit carnitas on corn tortillas with desired toppings. Enjoy your delicious Jackfruit Carnitas Tacos!
