Getting back to enjoying the little things in life I love most. I like to make things, one of them is food. Tonight I made a pork loin with a cinnamon/cumin/chili rub, homemade baked potato chips, and pan fried asparagus topped with a tomato relish & a sprinkle of fresh green onion. Feels good to be consistently cooking and taking time to do things I love that aren’t work related. Tested out some new ideas in the kitchen & I really liked this one although it’s not a complete dish yet. Chicken Cordon Bleu, stuffed with ham and provolone cheese, breaded in a cornflake-sugar crust, baked, and topped with a white Dijon sauce & heart shaped tomato.
