I delivered it before I remembered to take a picture but honestly, it's such a quick and easy dessert. I am all about delicious food (especially dessert) that is cheap and easy but makes everyone go WOW you must have worked so hard on this! While I can laugh and say "yes!" when in reality it took me fifteen minutes and like, $10.
So here it is, never fail chocolate mint pie for when you need a dessert but have neither the patience nor time no energy to give a single fuck about it:
Prebought Chocolate (or oreo!) Graham Cracker Pie Crust
One pack Andes Mint candies (chopped up or just get the baking bits that come pre chopped)
2 Family size (5.5 oz? something like that) Instant Chocolate Pudding Packs
Scatter Mint Pieces on bottom of pie crust, mix up pudding according to directions and pour into pan, chill at least two hours, pile Cool Whip on, wham bam you got yourself a pie.
Still Quick but More Homemade Way (ie: my favorite)
2 Sleeves Thin Mint Girl Scout Cookies, crushed into crumbs
2 Family Size Instant Chocolate Pudding Packs (or make it homemade, which I do sometimes but honestly, the box is easier and foolproof so why stress, this is supposed to be quick and painless)
1 Cup Heavy Whipping Cream
Mix cookie crumbs with granulated sugar and melted butter and press into bottom and up sides of pie pan. Pop into freezer to harden.
Prepare Pudding as Directed and pour into pie crust
Let chill for at least two hours
Mix HWC and Granulated Sugar on high till stiff peaks form, then coat pie generously, maybe sprinkle some larger cookie crumbs on top, maybe add decorative whole cookies or a mint leaf to make it pretty, whatever.
Stand back and watch your friends devour it
NOTE! This exactly recipe translates over for pretty much any pudding pie. Want one for summer? Lemon cookie crust, white chocolate pudding, whipped cream with strawberries or raspberries or blueberries (or all of them!) scattered on top. Literally delicious and perfect for a barbecue.
