The little line in the show bio on D+ and in the opening crawl alluding to Ahsoka being a former Jedi Knight is...inaccurate.

The only case to be made is based on Mace Windu's BS comment after Ahsoka's exoneration in CW Season 5 about the whole literal trial being her Jedi Knight Trials. She left therefore on technicality and never accepted it even when she returned for the plot of Season 7. She loss her rank in the Republic military and amongst the Jedi when she left that blade and braid.

On top of that, she explicitly said "I'm no Jedi," in rebels and seems visibly annoyed at any mention of bring called a Jedi since. It's an inaccurate title. It is a mislabel and it just isn't who Ahsoka is. This Ahsoka is not Jedi Ahsoka and clarifying who she is will be key going forward but we have time. Granted yes, Ahsoka has especially been different since her first death and second one.
