The first part of my slow cooker chipotle chicken. The first batch went towards these killer tacos topped with fresh cilantro, carmelized onions, corn, salsa verde and crumbled feta. So so so good guys, I could open up a taco truck right here right now. #lifegoals

Picture does not do this soup justice...chipotle chicken soup! (Ignore the candle accident in the background...) Chicken thighs slow cooked with a can of chipotle chiles in adobo + a half of a shiner bock beer for 4 hours until totally falling apart. Then used half the chicken thighs + broth as the base of this soup, adding a can of crushed tomatoes, black beans corn red onion garlic. So spicy and bright - cozy but also invigorating! This feels like a classic budget bytes recipe also-- but was totally of my own invention!
One of my favorite easy soups: cheese tortellini with spinach and tomatoes. Made mostly out of pantry ingredients, this is one of the first recipes I ever cooked for myself in my college apartment.

This was a random dish I threw together from leftovers that turned out AMAZING! I used lutenitsa as the pasta sauce and threw it over a bed of crispy sautéed kale with a grating of parm. WOW the lutenitsa eggplant pepper spread was so creamy and rich on the pasta, definitely plan to make this again.
6 dishes, one girl, 6+ hours of cooking. In particular the sweet potatoes and stuffing were the star of the show- Sweet potatoes cooked in molasses and orange juice. A perfect sweet savory blend with light carmelization. Sourdough stuffing with carmelized onions kale celery and thyme. Kale pesto pasta with ricotta and red chili flakes.
Three sisters hash with a fried egg. Sweet potato, corn, black beans with onion and jalapeno.
Quinoa spinach salad with beets cucumber scallion feta toasted walnut and balsamic glaze. So hipster and so good.
Mu ramen in Long Island city queens. Possible restaurant of the year in my book.
Toasted bagel with kale pesto ricotta and fresh sliced tomato.
Baked apple pancake. Lifechanging. Pan fry thin sliced apples in butter, add a light crepe batter with extra nutmeg to hot pan, bake in oven for ~10 minutes. So fluffy and light and warm and perfect. A great bread pudding texture that is delicious even reheated.
Vegan green curry with potato jalapeno cilantro bell pep onion snap peas baby corn. Extra ginger and garlic for a punchy but soothing winter dinner.
Grocery challenge update! This week's quick run included mostly staples: bananas, carrots, spinach, canned tomatoes, flour, butter, orange juice, and bread, well as a couple of rolls of on sale wrapping paper (hello, my name is Megan and I'm a Christmas junkie). Minus the wrapping paper, I came in at almost exactly $20, without even really trying. That's a win for this week.
Nothing like a homemade apple pie! This is loosely how my grandma makes it, except I can no longer bring myself to make crust (or anything really) with shortening. Instead I use Smitten Kitchen's All Butter Pie Crust, and it is predictably delicious. I much prefer my apple pies with crumble topping, and this pie just feels like home to me.
