Sushi dreams — Gosh, is there anything better than real good sushi?

Bit of a #throwback — May 31st was Mother’s Day here in Sweden, so of course I completely exhausted myself to spoil mum a little. It’s only fair considering hoe much she spoils me, right??

Midsummer Weekend— what a feast! 

Mum always spoil me with great food, last weekend wasn’t any exception.

Fancy meal pictures aside, this is what the other end of living with chronic pain and illness look like.

After ’cooking’ (aka putting salmon in the oven and stir frying some veggies) for two nights in a row the spoon supply is too low to cook anymore. Re-heated leftover rice, canned tuna, and canned corn ... dinner is served.

Leftover day! Uncle Ben’s boil-in-bag is a real lifesaver when I am all out of spoons but don’t feel like heating pre-made soup in the microwave for the 4th time in a week.

Ginger salmon with garlic and sesame fried white cabbage and sweet potato, and a bit of wasabi mayo on top.

Even though this barely even took 20 minutes to make it put me to bed for the rest of the evening with fever shivers and a headache that made me want to vomit - damn PEM. Can I get a yay for chronic illness, anyone??
