Well, Hello Beautiful! 🧡 Here’s a simple flourless, grain-free Pumpkin Cake with Cream Cheese frosting and Cinnamon-Monk-Fruit dusting for Mom’s 73rd Birthday (who loves everything made of Pumpkin - regardless the season). . . . While baking is my forte, giving them a fancy display is by far, NOT. This cake is officially my 1st attempt on mastering the art of crumb coating to achieve what traditional birthday cake should look like, thick with smooth, clean frosting on the sides. Knowing I fail miserably on that area, in the end, I just simply let them be messy as it is, placed them in the fridge, waiting for the presentation. . . . 3 hours later, under low-intensity-restaurant-lighthning, (plus birthday what-nots), strangely enough, its looking more “finished” that a completely naked cake would look like 😀 making me super happy with the outcome. :) . . .
