Skillet Cornbread made with Bolthouse Pea Milk and Flax Seed. Tastes just like Grandma’s... minus the moo cow 🐄Not sure how I’m going to get out of making this for the hubs on a regular basis... lol. Happy husband. Happy Preggo. 1 cup of All Purpose Flour 1 cup of Corn Meal 1/4 cup of sugar 1 cup of Pea Milk 1/4 cup of Canola Oil 2 tablespoons of Ground Flax Seed 6 tablespoons of water 4 tablespoons of Baking Powder 1/4 teaspoon of Salt 1. Preheat oven to 425. Spray Skillet or (I used I can’t believe it’s not butter Vegan) to grease the pan. 2. Boil water in small pan add the Flax Seed turn the heat low until it is thick like a paste (2-3 minutes). Sit to the side. 3. Add all dry ingredients then mix in all wet ingredients including the Flax Seed and water. Do not over blend (medium setting until it is a nice thick batter) 4. Fresh Muffins 😀 Egg-free. Apple 🍎 Sauce is the trick. And Flax Seed Egg. These are Mommy and Toddler approved. I would say it is one of her favorites that we make! Recipe 👇🏼 Flax Seed Egg (1 tablespoon of Flax Seed meal, 3 tablespoons of water. Mix together and let sit while you mix other ingredients) 1/2 cup of Sugar 1 cup of unsweetened Applesauce 1/2 cup of Vegan butter (I use I can’t believe it’s not butter vegan brand) 1 teaspoon of Cinnamon 1/4 teaspoon of salt 2 teaspoons of baking powder 1 teaspoon of Vanilla 2 cups of unbleached all purpose flour Coconut Oil to grease your muffin pan Fruit if you desire (I used blueberries and strawberries because it’s what we had) 1. Preheat Oven to 375. Grease muffin pan with Coconut Oil. Prepare Flax Seed Egg 2. Mix all dry ingredients first then add wet ingredients. Blend for about 3 minutes on medium. 3. Disperse into 12 cup muffin pan. (I usually can do about 2 tablespoons into each cup). 4. Add any fruit to the tops if you prefer. 5. My Valentine made dinner last night. His first go at Baked Ziti and it was 👌🏼 Penne Pasta 1bag of Spinach 1 cup of mushrooms 1 diced onion 1 box of Penne Pasta 1 jar of any tomato sauce (no we didn’t Make the sauce it was late lol) Kite Hill Cream Cheese (1 container) Follow your heart shredded Parm (1 container) Minced Garlic Salt and Pepper A few grape tomatoes to slice for the topping Avocado Oil 1. Preheat oven to 375. In large skillet Sauté onion, mushrooms, garlic and avocado Oil. In another pan, Boil the pasta and when done stain and sit to the side. 2. After about 5 minutes of sautéing add spinach to the large skillet. 3. After Spinach has shrunken down go ahead and add the container of the cream cheese then add about half of the Parm container also. Then add the jar of sauce. 4. Once everything is melted and mixed together nicely add the noodles to the mixture and blend all ingredients evenly. 5. Transfer ingredients to baking pan. Use the rest of the Parm for the topping. Sprinkle salt and pepper for your taste. Slice grape tomatoes and add those to the topping as well. Let bake for 20 minutes. Frozen Hashbrowns About 1/2 cup of Ripple Pea Milk (original) 1/2 cup of Kite Hill cream cheese 1/2 cup vegetable broth Diced mushrooms Diced Cilantro 1 diced onion 2 tablespoons of soy sauce Salt & Pepper to your liking Tablespoon of Avocado Oil Tablespoon of Minced garlic Ritz crackers 1/2 cup Follow Your Heart Shredded Parm to your liking. 1. Preheat oven to 375. Sauté the onions, mushrooms, avocado Oil and Garlic for about 5 minutes. 2. Add all other ingredients (except crackers) to the skillet for about 5 more minutes. 3. Top with Smashed Ritz crackers and Shredded Parm. Skillet Mushroom Gravy 😍👌🏼 2 cups of non dairy milk (I used Ripple Pea Milk- the original) 1/4 cup of all purpose flour Soy sauce to your liking Salt and Pepper to your liking 1 cup of Portobello Mushrooms (fresh) 1 yellow onion Minced Garlic to your liking Avocado Oil 1. Sauté the onion and sliced halves of mushroom with avocado Oil, garlic, salt and pepper. Sit to the side. 2. In Iron Skillet, coat with Avocado Oil. Add minced garlic, Milk, flour and seasonings. Use whisk to get rid of all flour clumps and nicely blended. Once cooked on medium heat for about 10 minutes, add mushroom mixture and let cook for about 5 more minutes. Tofu Scramble Taco Breakfast 🌮 1 Green Pepper 1 sliced Ugly Tomato 🍅 1 Onion Minced Garlic Avocado Oil Salt & Pepper 1 package of organic firm Tofu 1 teaspoon of Tumeric A dash of Nutritional Yeast Cumin to your liking Pickled Jalepenos Hot sauce if you desire Drain Tofu, Pat dry, and cover with Paper Towel. Sit skillet or pan on top to drain excess liquid. Let sit while you prepare the rest. Sauté chopped Onion, Oil, Green Pepper, Garlic, Salt & Pepper. Dice Tomato on the side. I also diced Pickled Jalepenos. (Both for topping) Mash Tofu, Tumeric, & Nutritional Yeast in a bowl with a Potato Masher. Once they are “egg-like” (scrambled) add them to the sauté mixture and let them cook on medium for about 5 minutes max. Add Bag of Spinach with soy sauce and cumin, and salt and pepper to your liking until it is good and steamed.
