Year 2: Week 11 of my State Weekly Recipe Challenge (aka #unitedstatesofappetite): Hawaii. @nytimes @nytcooking . . For Hawaii I made a slew of items. And it was almost an all day thing, because I have always wanted to be in Hawaii. I was tempted to do Loco Moco but since I did that for the previous challenge, I wanted to do something different. So I made Spam Musubi for lunch, garlic shrimp and rice with grilled pineapple for dinner, and haupia pie for dessert. . . As with most foods in the US, the origins of Spam musubi is rather disputed. The forerunner (seasoned slices on white rice in a baking pan) was claimed to be invited by Japanese-American internment camps survivors on the US mainland. But most origin stories focus on Spam's prevalence in Hawaii during and after WW2. The canned option was incorporated into local cuisines wherever American troops were stationed. Making this taught me I actually really like spam (at least the low-sodium version) and could totally see myself making some spammy eggs in the am. . . Garlic shrimp (usually served with rice), especially from shrimp trucks, is a staple in Hawaii. Hawaii is plentiful with its fresh local shrimp. I decided to serve it with some grilled pineapple, as pineapple is one of its primary exports. And also delicious? And I’ve never had it grilled. . . For dessert I made haupia pie. Haupia is a coconut dessert typically served at luaus. It’s technically a pudding, but primarily resembles a gelatin like dessert. Recently, there have been some cafes that have turned this wondrous dessert into pie form (and mixed some chocolate into it). So of course I had to try it. And it was delicious and a huge hit.
