Welcome to my blog! This is my little space where I can show my love for food, life and love. First, I'll give a little background. Its not a sob story I promise but I've had a pretty tough journey through my teens, suffering with Fibromyalgia from a very early age. Fibro brought a black cloud over my life and I lost a lot of love and motivation for life and all the amazing things that the world brings. Being accused of an eating disorder (due to doctors not acknowledging my condition), caused me to lose my passion for food and almost self fulfil their accusations. After a few unpleasant years, I powered through and struggled my way through all the bumps in the road. I can now safely say that I feel I have got the better of Fibro. Nevertheless,I have been constantly infuriated (and often influenced) by the ludicrous beliefs that cutting out certain foods or food groups is 'healthy'. I, naively, thought that following these so called 'health kicks' would somewhat cure me of Fibro. How wrong I was. CARBS ARE GOOD, PROTEIN IS GOOD, FATS ARE GOOD. Why we feel we need to cut out food groups, and limit our calories and go hungry throughout the day is BEYOND ME. Everything is good in moderation. Guilt is not allowed on this blog. My blog is dedicated to health and eating well, not less. I want to share with you my love for food, my recipes, my restaurant finds and much more. Yes, it's all healthy but I do not scrimp on taste! One of my faves! I usually oven bake salmon but it goes so nice and crispy when its pan fried (this was in coconut oil). Served with a homemade tomato and basil sauce, courgetti and spelt spaghetti. Wednesday night treat! @wholeearthfoods peanut butter is EVEN good with dinner. I made this satay by: Mixing 2 tbsp PB, 1tsp chilli, a big chunk of fresh ginger grated, 2 tbsp tamari/soy, 1 clove of garlic crushed, half a squeezed lime and a tbsp honey, the about 1/4 of a tin of coconut milk. I put the chicken on skewers and spooned a couple of tbsps of the satay on top and shoved in the oven at 180 for 30mins. With the rest of the satay add another 1/4 tin of coconut to make it runnier so you can use it as a dressing for the salad. If you're veggie or vegan you can just miss out the chicken! The salad is a Thai quinoa salad that I threw together. Crispy Salmon marinaded and cooked in a spring onion, garlic, ginger, chilli, Marsala, honey and rice wine sauce. Served with a load of veggies cooked in cumin, 5 spice and soy on top of a mountain of brown rice. My dinners pretty much have to have carbs, otherwise I end up craving sugar and, more specifically, chocolate later in the evening! This dinner was beyond good. I looooove satay chicken, but it's apparently disgustingly unhealthy as it's usually a takeaway dish. So I decided to cook up my own version. I marinated the chicken in lime, soy sauce and lots of curry powder for about an hour. Meanwhile stirred 3 tbsp of @meridianfoods peanut butter, more lime juice and soy, minced garlic and minced ginger, and a chopped red chilli. This will be like a paste, so to smooth down I gradually whisked in 100% coconut cream until I got the texture I wanted. Poured over the sliced chicken breast and baked for 30mins. I made my own ravioliiiiiiiii 💃🏻 and this was the super amazing filling I stuffed them with. It is wild mushroom, Parmesan and ricotta. With LOTS of garlic, stock, and thyme. I had honey roasted butternut squash risotto for lunch 🙊 I neeeeed carbs, so instead of cutting them out I try and replace some of them with healthy versions. Brown rice is a fab healthy alternative to arborio rice, and works really well. It does take a while to cook, but if you cook a large batch them you can keep it for lunches throughout the week.
