Chowdah
Now that football season is upon us, I’m recalling my favorite football-related memory from last season: New England clam chowder. As a native New Englander, I did two things that probably (I mean, in all likelihood, definitely) helped the Patriots win the last Superbowl:
I bought a Patriots balloon at the grocery store, and
I made chowdah to bring to a friend's Superbowl party.
In case you hadn’t guessed, I am not the football fan of my household, but the one I live with has a temperament that waxes and wanes quite dramatically with Patriots' outcomes, and so it is definitely in my interest to partake in whatever superstitions it takes to secure a win.
Growing up just outside Boston, I have had my fair share of chowdah, though I hadn't thought to make it myself until last year's Superbowl. And wow, dealing with 100 clams is definitely a hassle. While it was fun to see them all steam open and to feel like I was getting the completely authentic chowder-making experience, I can't say as though the half hour it took me to scrub the clams clean was something that I would enjoy repeating.
I used this Anne Burrell New England Clam Chowder recipe, though I didn't want to include quite as much bacon as what was used here for fear of making bacon chowder. I included about half the amount, and instead of cooking it in the chowder the whole time, I crisped it at the beginning, then took it out, and just added some bacon crumbles into the pot before serving, leaving the extra for individual bowls. I doubled this recipe, and was surprised to get a full quart of clam juice out of my batch of clams after adding just 2 cups of water to the pot. There was plenty of liquid, and the amount of flour used to thicken the soup is about right. Some may like it thicker, but I prefer to keep it from entering biscuits and gravy thickness territory, which is, unfortunately, somewhat common with chowder served in restaurants. Overall, I give the recipe high marks (with my half-the-bacon mod). Next time, I might just use canned clams, though... unless, of course, a Patriots win depends on it.
