Blueberry Key Lime Coconut Milk Ice Cream!!! Is it just me or is summer the only time for ice cream?! Being a dairy free house can have it's difficulties but not with a little imagination! I decided to whip up an ice cream for the weekend, but it's still turning out like an ice block and has to sit out! 😫 Any suggestions to make this not so solid? (Besides adding vodka which I've already pondered!) 😉 It's still delicious and I'm absolutely going to indulge in this treat! Happy Sunday! I hope you had a kick ass weekend and are ready for the week ahead! Personally, I relaxed and meal prepped today to get ready for my upcoming week that will be FULL of workouts! That said, tonight’s dinner was a QUICK and easy throw together meal! I need to tweak the ingredients a tad before I post it as a recipe for you all! BUT I can tell you the it is a garlic citrus shrimp over garlic Cauli-Rice with a side of sauteed rainbow chard! Are you anything like me?! Then you crave spicy chicken every now and then! This take on chicken bacon ranch is spicy and full of flavor AND good for you! Check out my recipe below! (Both for Instantpot and crockpot) Paleo Chipotle Ranch Bacon Chicken Thighs: 1lb Bacon 2 lbs Chicken Thighs 1C water Garlic, salt, and pepper to taste 1 C Paleo friendly ranch (I used Primal Kitchen) 3.5 oz chipotle peppers in adobo sauce Instantpot version: Sautee diced bacon until cooked Turn off IP Add chicken and garlic, salt, and pepper Turn on IP to manual on High for 17 minutes Allow to naturally release (approx 14 minutes) Meanwhile- In separate container, blend the ranch and chipotle peppers/sauce (I used a small ninja, but a blender or immersion blender would work perfectly as well. Remove chicken and bacon from liquid, drizzle desired amount of sauce over chicken and bacon. For crockpot: Follow all instructions cook bacon in pan.when cooked through, add to Crock pot with chicken, water, and seasonings. Be sure to add 1 extra cup of water. Cook on Low 5-6 hours or on High for 3-4 hours Enjoy with a side of veggies!
