Vegan Burgers! Made from just 3 simple ingredients; Butterbeans, Broccoli and Sweetcorn. Just blend them all together in a food processor then shape them into burger shapes and bake them in the oven for about 20mins.
When I'm not at work, I love baking! And today my little goodies were these, Vegan Eclairs! I found this very simple recipe: https://thelittlestcake.wordpress.com/tag/vegan-eclairs/ But have tweaked a few of the ingredients because I didn't have some of the originals. Now this is by no means a 'healthy' vegan food... but I wanted to recreate a sweet treat that my family really enjoy. And I'm quite happy at how they turned out, considering it was my first try of ever making Eclairs! I hope you give the recipe a try, they are delicious :)
Festive baking for the family is always fun, and what's even better is these treats are CRUELTY FREE! No guilt should come from eating, we eat to fuel our body and minds. And eating Vegan doesn't mean you have to cook extravagant foods... I prefer simple eating but at this time of year I like to make the effort to conjure up something tasty for my friends and family, whilst ensuring them it's definitely Vegan and no we don't just eat sprouts and potatoes for our Christmas dinners! No these aren't the most healthiest Vegan choice, but the festive period doesn't last forever, and it beats eating baked goods with dairy and eggs!
I'll be sure to post more Vegan scrummys over the next couple of days along with recipes :) Merry Christmas everyone!
P.S I'm fully aware that the breadsticks look like twigs with mould.. but they taste better than they look, I swear.. besides it's home baking.. it's ok for things to look a little bodged ;)
A healthy me is a wealthy me. At the age of 21 I may not be 100% happy and secure with my body but I am learning to accept my flaws, and appreciate just how amazing the human body actually is, on a cellular level. Personality and vibrancy is my focus, not the appearance of my face or the shape of my body.
Only cost £1.99 from the local little health food shop! Never tried it before and I've heard it has an abundance of nutrients. Any ideas of how to use them in recipes? People have had mix responses from the taste of it..
Finally found a B12 that actually tastes nice! (apricot flavour) and isn't a nasty pill that I can't swallow. Cost around £12 in Holland and Barrett, a small price to pay for the confidence of knowing I wont be low in B12 which would cost me a whole host of illnesses!

Yesterday I went trek training in the Peak District, turns out they don't like the overweight people there.. I'm tiny and could hardly fit through here! But I'll forgive them as the Peak District is a beautiful place to hike :) Less than a month till my 27 mile charity challenege! Wahoo :)

Homemade popcorn! I then added maple syrup and as my dad put it "It tastes like real popcorn"! ... Well I'm glad it didn't taste like rubber?? This was just a small serving, I bought a 500gram packet for just £1.90 and it says it has 20 servings! Now I don't know what their idea of a serving is.. (probably not the same for us high carb Vegan folk...) but what I do know is there was still plenty in the packet, thus meaning plenty more portions for movie nights! So so much cheaper than buying the ready made or paying for them at the cinema. Another bonus is that watching the kernels pop gives you a couple minutes of free entertainment..

New headphones! Great for exercise, tried them out today for the first time during my 6mile bike ride and couldn't be happier with them!
Happiness is... finding half price fruit!
