per wikipedia, roughly 8% of mainland china's population is non-han chinese. while this does not account for immigrants nor for the diversity of complexions within ethnic groups, it does give me a point of comparison when comparing playable characters made in mainland china against the local playerbase.
disclaimer: i myself am han chinese and vary between light-skinned to an olive, depending on sun exposure.

"tanned" = light-skinned with a tan/shade varies depending on lighting/allegedly "brown"-skinned
olive/warm-skinned = naturally "tan" or bronzed skin (as is common in west asia/north africa, southern europe, central asia, south-east asia, some parts of oceania, and indigenous america)
brown-skinned: light to warm brown skin or a pink that is trying to pass as such (as is common in east africa, north africa/west asia, southern europe, central asia, south asia, some ethnic groups in east asia, indigenous america, oceania/polynesia, and persons of mixer ethnicity)
dark brown-skinned = what westerners might actually consider "black" (often represented as a cold grey-ish brown/purple pink or via dark grey for some unholy reason)
whitewashed = characters who are light-skinned despite being based on persons/cultures who were not (i have not investigated every game for this, just those i already had context for)
sus = charaters whose paleness is suspicious given their inspiration but have not necessarily been whitewashed, often due to mythic/sci-fi/fantasy elements being involved

HoK's key selling point was the ability to play as historical chinese figures but then there was a government crackdown on "misleading" historical fiction (cue a period where no new historical figures were added to the game).
æćææ± GHENGIS KHAN -> è CANG: the character of ghengis khan (central asian man who once conquered most of eurasia, china included) was reworked into a generic (i.e. ambiguously east asian) "raised by wolves" character. this came after years of neglecting the character entirely (presumably to avoid seeming too anti- or too pro-han chinese).
having crossover ship between a character-from-a-popular-fandom x a character-from-a-niche-fandom is extremely difficult and embarrassing because you have to doxx your tiny fandom if you wanna talk about it
like the moment that someone in big fandom sees my crossover ship with niche fandom (food fantasy in this case) they'll know my exact location in the ff fandom via small population and typing style
