They don’t actually give you an encyclopedic knowledge of something when you get in a degree in it. They give you the skill to learn more about it on your own.
I don’t actually know about every book ever written and what critics say about it but I sure do know how to find out. And that’s what you pay for when you get an English degree.
They teach doctors how to find and read scientific studies and whatnot. They don’t just pop out of medical school fully formed and knowing everything forever. That’s why they make them renew their medical licenses. To make sure they’re up to date.
If you’re wondering what the use of college is that’s basically it. You learn how to learn more about one particular thing and/or how to make connections in the industry it’s part of. The GE classes also hopefully turn you into a more well educated citizen that knows how some basic things not related to your field of study work.
