Need a recipe that takes less than 30 minutes, and only uses one skillet? Me too, so hereās a Whole 30 Chicken Recipe with Bacon, Spinach, and āRiceā.Ā
What makes aĀ perfect quick dinner recipe? For me, I say it should 1) require only one skillet, 2) include bothĀ a protein and a vegetable 3) taste ah-mazing. This recipe does all 3 of these things, and my 3 taste testers say that itās a winner.Ā
Bacon makes everything better. If youāre on a Whole30 they recommend Pedersonās Natural Farms bacon.Ā I use whatever I find at Trader Joeās or Whole Foods. So to start this dish off, I chop up the bacon. Next throw in the chopped chicken, throw in the spinach, riced cauliflower, seasonings and lemon juice. So simple and incredibly good!
The riced cauliflower comes from Trader Joeās. They have frozen or fresh riced cauliflower. I like the frozen. Actually, I love the frozen riced cauliflower. Itās one of the best things thatās ever happened to my kitchen! When I first found it I grabbed a few bags, used them and went back for more.. But they were gone and the store told me there was a shortage of cauliflower. Safe to say, I now try to keep about 8-10 bags in my freezer at a time. Extreme? I think not.Ā
I made this dish because all of you seem to really like my Lemon Rosemary Chicken recipe, which is also a one-skillet, cast iron, chicken dish. If you make this, I want to know, how was it? Comment below with your experience!Ā
Whole30 Chicken with Bacon and Rice

Ingredients
5 slices bacon, chopped
1 lb chicken, cubed
3 cups riced cauliflower
3 cups spinach
3 green onions, chopped
½ tsp garlic salt
½ tsp onion powder
½ lemon, juiced
Salt and pepper, to taste
Instructions
In a large cast iron skillet (or other skillet), cook the bacon on low to medium heat. When the bacon is almost cooked, add the chicken and cook it in the bacon grease on medium heat, about 4 minutes on each side.
Add the cauliflower, spinach, green onion, garlic salt, onion powder, lemon, salt and pepper, and cook until the spinach is soft and all ingredients are hot, stirring continuously.
Serve hot! This recipe is great as leftovers too!
