I mentioned this in a comment, but if they had been intentional and cared to look to the books for it, there was already a ready-to-go book lore excuse for why Lestat would know what's happening in scenes he's not in, because he has a canon explanation for doing the same thing in The Queen of the Damned:

(can I also just mention this is a perfect example of Lestat’s actual narration style from the books when he's at his most jokey and self-aggrandizing and the show narration doesn't resemble it at all)

I would think if they were intending all the scenes he's not in to be told by him, they would do more with that device, or give a better explanation for it, or he would introduce those scenes more often in the narration, or it would impact the narration or those scenes meaningfully in any way, but that's just me.

After all, I don't know if the narration was added later for sure.

Because all of the things that made me think it was could also just be terrible writing!
