Ingredients: 2 1/4 teaspoons active dry yeast. 3/4 cup warm water 110F. 1/4 cup granulated sugar. 1/2 teaspoon salt. 1/2 cup evaporated milk. 1 large egg. 4 cups all-purpose flour. 1/4 cup unsalted butter softened. Vegetable oil for frying. Powdered sugar for dusting.
Instructions: In a small bowl, combine the warm water and yeast. Let it sit for 5 minutes until foamy. In a large mixing bowl, combine the sugar, salt, evaporated milk, and egg. Add the yeast mixture and 2 cups of flour to the bowl. Mix until well combined. Add the softened butter and gradually mix in the remaining 2 cups of flour until you have a smooth dough. Cover the dough and let it rise for about 2 hours until it has doubled in size. Heat vegetable oil in a deep fryer or a large, deep skillet to 350F 175C. Roll out the dough on a floured surface to about 1/4-inch thickness. Cut it into squares or rectangles. Fry the beignets in the hot oil until they are golden brown on both sides, about 2-3 minutes per side. Remove the beignets from the oil and drain on paper towels.
