"What counts as sentience anyways, and is that concept even consistent or useful?" Is an important question, but at a certain point you either throw up your hands and give up (and, tacitly, go back to whatever background assumptions you already had. That used to be "animals are merely automatons" or "animals don't feel pain" in some times and places!)
