Beat 'Cuse Pasta <sadly didn't work on game night :( ...>
Ingredients: 1 box squash-tomato pasta (its a new veggie filled pasta by Barilla), 6 strips of bacon chopped, 2 diced zucchinis, 2 cups diced mushrooms, 1.5 cups frozen peas, 2 cups chopped kale, 1 onions, 14 oz pureed tomato, 4 oz tomato paste, 2 tsp garlic powder, 2 tsp dried oregano, 2 tsp fried parsley, 1 tbsp basil, pepper, salt
Dice HALF an onion and sautee in a large pot with some oil.
Add tomato puree and seasonings.
Add tomato paste. Turn on a low heat and let simmer on the side, stirring occasionally.
In large frying pan add bacon, half diced onion, and mushrooms. Let cook for 2-3min.
Add zucchini, stir and let cook 2min.
Add peas and turn down on a low heat.
When 20min away from serving bring water to a boil. Add pasta and cook for 7min.
When 10 min away from serving add kale to the frying pan.
Drain pasta and add to the sauce along with the mixture from the frying pan.
Enjoy!

Oh... My.... Goodness. We have found the holy grail. Inexpensive, delicious, healthy, Asian food that doesn't leave you feeling gross afterward! My friend described as Asian Chipotle except infinitely better... and as it turns out, it is owned by the same company as Chipotle. When I was there I ordered the brown rice bowl with chicken and pork meatballs, long bean, green curry, green papaya slaw, and peanuts (pictured above). Also for context, I just got this after a rough morning of taking a practice GRE with a huge... headache. It was exactly what I needed, wholesome, filling, and flavorful. I think it was only something like $7/8.
Go check it out-- highly worth you time and $$$.
Taj of India... Not so good. Like at all.
So I ordered take out from Taj of India on M St. on Sunday bc I had a living social deal. And it was the most frustrating experience ever. I ordered my food at 6:30pm and did not see it until 9:30pm. Of course by that time the last thing I wanted to see was Indian food, having eaten a tuna fish sandwich from Vital Vittles in sheer frustration and hunger.
When I finally gave up on waiting at 8:15pm, I called them to ask for a refund. Apparently even though my number was entered correctly on the invoice, they had been calling the wrong # to drop off my food. When I finally got my order, they made me feel like it was my fault, did not apologize and the food was of course cold and unappetizing.
I'm not sure how on a normal basis the food of Taj of India (especially because I was so POed that I let one of my guy friends chow down on it in the library (he didn't care for it that much)) but I can tell you one thing, I am NEVER ordering from there again.
German Jager Cakes
Ingredients: Cake: 1 stick + 5tsp unsalted butter, 1.25 cup sugar, 3 eggs, 3 tsp Jagermeister, 1 tsp vanila extract, 1/2 cup unsweetened cocoa powder, 1 tsp baking powder, 1/2 tsp salt, 1 tsp baking soda, 2 cups cake flour; Frosting: 12 oz can evaporated milk, 1.5 cups sugar, 1.5 sticks butter, 4 egg yolks, 1.5 tsp vanila extract, 4 tbsp Jagermeister (plust a shot for the cook), 2 cups shredded coconut (toasted), 1.5 chopped pecans
Preheat oven to 350F.
In a mixing bowl-- cream butter and sugar until light and fluffy.
Beat in eggs, then add Jager and vanila.
Heat 1 cup water until warm.
In a separate bowl- combine cocoa, baking powder, salt, baking soda, and flour.
Mix the flour mix and water into the butter mixture in three alternating additions.
Pour batter into a lined cupcake tin
Bake for 25-30 min.
Start making the frosting by combining evaporated milk, sugar, butter, egg yolks, vanila, and jager in a small sauce pan on a medium heat.
Stir 15-20min or until thick and golden brown.
Remove from heat. Stir in coconut and pecans.
When cupcakes are cool- slice in half, fill with frosting and cover the top with frosting also.
These are a hit at parties...
Teriyaki Tofu and Leeks
Ingredients: 2 cups brown rice, 1 package tofu, 2 sliced leeks, 1 diced zucchini, 1 cup frozen edamame, 1 cup frozen broccoli, 1 cups frozen spinach, 3 tbsp sesame seeds, 3 tbsp teriyaki sauce, ginger
In rice cooker prepare to cups of brown rice as normal— this takes the guts of an hour so make this earlier in the day if necessary.
In a large skillet start cooking frozen veggies on a low heat to cook the water out.
Slice leeks and wash thoroughly (they have a lot of dirt in them) and add to the pan.
Dice tofu and zucchini, add to pan, and cook for 5min.
Add teriyaki, sesame, and seasoning-- cook another 5 min.
Enjoy with rice :)
Roasted Red Pepper Pasta
Ingredients: 1lb chicken breast, 6-7 large red peppers chopped, 2 large onions diced, 15 oz chopped tomatoes, 4 oz tomato paste, garlic powder, parsley, red pepper flakes, pepper, salt, cayenne pepper, whole wheat spaghetti
Preheat oven to 350F.
In a large lined pan put chopped peppers and onions with a light covering of oil and season with red pepper flakes and a little garlic powder. Roast for 1.5 hours.
After roasting let cool for 5 min and blend peppers and onion in a food processor or blender. Pour mixture into a sauce pan add diced tomatoes, tomato paste and seasonings.
Cover (it will spurk all over the place!) and let cook together on a low heat for 20-30min.
When like 45min away from serving: Prep chicken breasts by rubbing with oil, pepper, and parsley-- cook in the oven (at 350F) for 15-20 min on each side (IMPORTANT: this is for the off the bone, individual breast, if any question look at packaging for cooking instructions). Once cooked let chicken rest for 5min.
When 15min away bring water to a boil and cook pasta for 7-8min or until soft.

Hawaiian Chicken and Pineapple Rice
Ingredients: 2 Hawaiian chicken breasts from Whole Foods, 2 cups brown rice, 1/2 cup chicken stock, 1 cup diced pineapple, 1 diced zucchini, 2 tbsp sesame seeds, 1/2 tbsp curry powder, 1/2 tbsp ginger, salt, pepper, red pepper flakes
In rice cooker prepare to cups of brown rice as normal-- this takes the guts of an hour so make this earlier in the day if necessary.
Preheat oven to 350F. Cook in the oven for 15-20 min on each side (IMPORTANT: this is for the off the bone, individual breast, if any question look at packaging for cooking instructions). Once cooked let chicken rest for 5min.
Bring chicken stock to a bowl with curry powder and ginger. Add zucchini and cook for 5-7min until crisp.
Add half the rice to this mix and stir on a low heat. Stir in pineapple and seasoning. Add remaining rice and season with salt, pepper, or chili flakes, (or curry powder or ginger) to taste.
Slice chicken and serve!
Quick and easy dinner during the school week :)
Chicken Pot Pie
Ingredients: 2lbs chicken breasts, 2 carrots diced, 10 new potatoes diced, 4 stalks of celery diced, 1 cup peas, 1 cup chopped broccoli, 1 leek, 2 large onions, 1.5 cups flour, 4 cups of chicken broth, 1 cup half and half cream, 1 cup veggie broth, 1 cup of hot water, garlic powder, dried parsley, salt, pepper, 1 package of peppridge farm puff pastry
Preheat oven to 350F. Prep chicken breasts by rubbing with oil, pepper, and parsley. Cook in the oven for 15-20 min on each side (IMPORTANT: this is for the off the bone, individual breast, if any question look at packaging for cooking instructions).
Bring pastry out to thaw.
Bring one cup of water to a boil in a small pot. Add diced potatoes, carrots, and celery. Let simmer for 7min and set aside. DO NOT DRAIN-- you want to keep the water bc all the goodness and flavor of the veggies is in there!
In a large pot add diced onions and leaks with olive oil. Cook until tender.
Add flour and seasoning and mix over heat-- you want to scorch the flour (ie. make sure if comes in contact with the heat) so that it will take liquid and therefore be able to thicken into a sauce.
Add broths, veggie water, and cream. Bring to a boil and stir for 2min to thicken.
Dice chicken and add to mix.
Add peas and chopped broccoli (frozen works)- Keep stirring.
Add remaining veggies and keep stirring.
When 20-25min away from serving put puff pastry in the oven. When cooked, cut it and serve on top.

Quinoa Salad
Ingredients: 12oz pre-washed quinoa, 2 cups water, 2 cups vegetable stock, 1 cup pecans, 1 cup cranberries, 2 cups celery, 2 apples, 2 tsp cinnamon, 1 tbsp ginger, 1 tbsp salt
In a large pot bring quinoa, water, and vegetable stock to a boil.
Dice apple and celery and add to the pot.
Bring temp town to a simmer and let cook for 10min.
Add cranberries, pecans, and seasoning. Cook for another 5 min, or until all liquid has boiled into the quinoa.
Enjoy hot or cold :)
This dish is actually really great for breakfast, you can forgo the celery if you want and add in more apple or other fruits.
Restaurant Week DC 2012!!!
You guys! You guys!!! It is restaurant week! I just got back from winter break and realized that the world (DC) is a magical place! It is restaurant week until Jan 15th (though some are going through later!)! So everyone go try those super expensive restaurants that you never thought you would try for fixed prices of $20.12 for lunch and $35.12 for dinner!

Homemade Sushi
Ingredients: imitation crab stick, avocado, smoked salmon, cucumber, carrot, seaweed salad, nori (seaweed sheets) rice, salt, sugar, rice vinegar (feel free to add whatever contents you want, we strayed away from raw fish since this was out first time)
Make 4 cups of Nishiki brand rice in a rice cooker
Remove rice after it has completed cooking and place it into a LARGE bowl
Add half cup rice vinegar, 6 tablespoons sugar and 1.25 tablespoons salt to the rice
Mix these ingredients with the rice until the rice is fully cooled. mix in such a way that the rice remains fluffy and aerated, DO NOT pack it down.
Lay a piece a saran wrap onto a bamboo mat
Lay a nori sheet on the saran wrap covered mat
Wet your hands (as to prevent the rice from sticking to them) and grab a ball of rice. spread this rice out thinly and evenly across the nori sheet
Place the contents of your choice across the center of the sheet (we suggest starting with 2 pieces of crab stick and thinly sliced avocado)
Now roll the nori sheet into a tube, using the bamboo mat to compress everything
"Seal" the roll with a few drops of water so the nori sheet does not reopen
Slice the sushi tube in approximately 6 sushi pieces

Banoffee Pie
Ingredients: 1 graham crackers crust, 4 bananas, 4 oz dulce de leche sauce, 1 cup heavy cream, 1/4 cup sugar, 1 Cadbury flake
*This recipe is super fast, so better to make when ready to serve*
Fill graham cracker crust with the dulce de leche which you can find in most super markets (you can also make your own by boiling cans of condensed milk).
Slice bananas and put on top of the dulce de leche.
Whip cream while slowly adding sugar.
Put whip cream on top of bananas and crumble the Cadbury flake on top.
Enjoy!
