On Friday´s evening I decided to do rice casserole! Casserole is commonly understand as a shared dish – pot from which everyone shared.
The word casserole originally referred to the pan in which the dish was cooked. Casserole is from a French word meaning “sauce-pan“; a large, deep dish used either to cook something in an oven or to serve the food cooked in it. The French word “casserole” had been derived from the old Provencal word, “cassa” and the Medieval Latin word, “cattia”, both of these words meaning “ladle”.
Today, you can find casserole dishes with the finest and most expensive ingredients, as well as the ones containing previous left-overs and then baked, eaten and enjoyed all over the world.
sweet paprika powder, cayenne pepper, dry parsley, sage and thyme
3 cups chicken broth (water with vegetable stock)
1/4 cup lactose free cream
1 cup lactose free cheese
Preheat the oven for 180 degrees and take a big baking pan/pot. Then mix rice, cut bacon and finely chopped onion. Afterwards, cut chicken breasts and season them with salt, sweet paprika powder, cayenne pepper, dry parsley, sage and thyme. Add chicken breasts into the pan, mix it with rice mixture and evenly distribute it.
If you have chicken broth, add it into the pan. If not as me, pour water with vegetable stock instead to the pan. Afterwards, add lactose free cream and stir everything properly together. At the end, top it with lactose free cheese (or with cheese according to your taste) and mozzarella cheese.
Cover with aluminium foil, bake it in preheat oven for 40 minutes. Remove the foil and bake for other 15 – 20 minutes or until the chicken or rice are fully cooked. To finalize casserole, garnish with fresh parsley and serve.
