Ingredients: 4 chicken breasts, boneless and skinless. Salt and pepper to taste. 1/2 cup all-purpose flour. 2 tablespoons olive oil. 8 ounces mushrooms, sliced. 4 cloves garlic, minced. 1 cup Marsala wine. 1 cup chicken broth. 2 tablespoons unsalted butter. Fresh parsley for garnish.
Instructions: Salt and pepper the chicken breasts, then coat them in flour and shake off the extra. Put olive oil in a big skillet and heat it over medium-high heat. It will take about 5 to 6 minutes on each side for the chicken breasts to turn golden brown after you add them. Take the chicken out of the pan and set it aside. Put garlic and mushrooms in the same pan. It will take about 5 minutes of cooking until the mushrooms are soft and golden brown. Add Marsala wine to the pan and bring it to a simmer. Make sure to scrape the bottom of the pan to get rid of any browned bits. Add the chicken broth and stir it in. Then add the chicken breasts back to the pan. It will take about 10 minutes of simmering until the chicken is done and the sauce is thick. Add butter and stir until it melts and the sauce is smooth. Before serving, sprinkle with fresh parsley.
