Ingredients: 1 lb ground beef. 1 onion, diced. 2 cloves garlic, minced. 1 can 14.5 oz diced tomatoes. 1 can 10.75 oz condensed cream of mushroom soup. 1 cup beef broth. 1 cup frozen corn. 1 cup frozen peas. 1 cup uncooked elbow macaroni. 1 cup shredded cheddar cheese. Salt and pepper to taste.
Instructions: In a skillet, brown ground beef with diced onion and minced garlic until beef is no longer pink. Drain excess fat. In the slow cooker, combine the cooked ground beef mixture, diced tomatoes, cream of mushroom soup, beef broth, frozen corn, frozen peas, and uncooked elbow macaroni. Stir well to combine. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the macaroni is tender. Before serving, stir in shredded cheddar cheese until melted. Season with salt and pepper to taste.
