I’ve been feeling down and neglecting my health a bit so I made these oatmeal cookies for some comfort. ☻
My first attempt at cauliflower “wings”. Tossed on a wrap w spinach, avo, n carrots and drizzled with an avocado dressing of sorts.. I don’t even really care for avocado much tbh and I definitely made my cauliflower’s batter too thickkk but I would try it again with some adjustments. ☺ I also had a ranch style dressing on the side for some extra flavour.

A lazy coconut chickpea curry over jasmine rice. I made this from mostly left over ingredients used in previous dishes and didn’t bother to measure because I am lazy. I should have threw a leaf on top for aesthetic purposes but here we are.

A late snack: almost-end pieces of rye toasted w mayo and topped with a locally made vegan havarti cheese, spinach, tomato, and cracked pepper.
I’ve been lazy and just eating tofu scramble and chili frozen from the week before and oats along with random apples and carrots throughout the day lol
This is just tofu scramble topped w salsa and paired w toasted rye
Y’all too old to be saying you don’t like vegetables and/or water.
PB Overnight Oats
I wasn’t kidding when I said I’m making this all the time now. 😅 I liked this image better than the last so I’m removing it and keeping this one! Lol.
INGREDIENTS
1/2 cup almond milk (or preferred plant milk)
3/4 tbsp flax or chia seed (I use flax)
2 tbsp PB
1 tbsp maple syrup
1/2 cup oats
toppings*
To make:
Combine milk, seeds, PB, and maple syrup.
Add oats, stir, and press to make sure all oats are covered.
Cover securely and refrigerate at least 5hrs.
Enjoy! ♥
*Toppings are obvi optional. I add a sprinkle of grains n seed and cinnamon sugar to top mine. You could also add your favourite fruits, nuts, berries, etc.
