My ex had this mac and cheese recipe he reverse engineered from a local steakhouse that he really liked - he let me write it down but told me to never share it with anyone. He was a chef (trained, blahblahblah), but also a bit of a dick. So anyway, here's his recipe:

Mac and Cheese

Ingredients:

1 box medium pasta shells (or really whatever your favorite pasta is, remember, the guy who made this was an ass)

1/2 a block of Velveeta cheese, cubed (or similar cheese/gelatin product)

1 cup Gruyere cheese, cubed

1 cup heavy cream

1/2 a stick of unsalted butter

Salt and Pepper to taste

Directions:

In a medium pot, bring some salted water to a boil.

Add pasta to boiling water and cook to al dente.

While the pasta is cooking: in a small sauce pot, bring heavy cream and butter to a low simmer to warm.

When the pasta is cooked, drain and reserve one cup of hot pasta water. Return pasta to pot, placing it back on the burner while reducing heat to low/medium.

Add warm cream and butter to the pasta. Stir. Add cubed cheese and cheese product, then stir until melted and creamy.

If the sauce becomes too thick, add reserved pasta water a little at a time until desired creaminess is achieved.

Add salt and pepper to taste.

Enjoy!
