Lunch and Little Garden update 💚 I have had so many messages over the last month saying they miss Kishi’s garden update. She does spend a decent time on her terrace - she had sow so many seeds last week. I will ask her to share it with you guys. Meanwhile, enjoy this. Yesterday the harvest was Arbi patta , Kalmi Saag, Chillies, and Karela. For lunch today, I made the kalmi saag, pickled ginger, and mote kale chole chawal. Look at her moringa plants; they are now over 10-11 feet tall. I remember her planting them when they were just 2 inches 💚 Wash and chop the kalmi saag (water spinach). In an open mouth pan, add a little groundnut oil, add lots of garlic pods, and dry red chili sauté; keep it aside, now in the same pan, add 1 chopped onion and add the Saag. Cook till it’s wilted, and its raw flavor is gone. Don’t overcook it. Season, add garlic and chilies. It’s ready! Yes, that simple. For Chole, follow the same recipe as Rajma and add a little Kasuri methi in the end💚 I hope all of you are well. Simple pickles for the season. #tbt Made two pickles a couple of days back. PICKLE 1: Lemon - Ginger- Fresh Turmeric in Sea salt: you just make sure your jar is sterilized, and hands are clean making this. Layer everything and add salt on top. Press it down a bit and juices from lemon with mix with salt and help cure this pickle. . . PICKLE 2: Raw mango/Kairi/Ambi/Green Mango pickle with chili in gingelly oil. I followed @masterchefmom’s recipe. . . Meal for one 💚🍏🍎💚 It’s a very quick, crispy, crunchy delicious salad. I use my mandolin to thinly slice 1 apple: 1/2 each of 🍎 and 🍏.Then I cut them into thin strips. Julienne very finely some orange rind, slice 7-8 red grapes in halves ( honestly you can use whatever fruits you have at home) I also added toasted walnuts for texture. Add all these ingredients in a wide glass bowl. . Now the twist or let’s say the secret ingredient is the dressing. Make sure you dress the salad only before eating. In a small glass bottle add the following 🧃 - 1 tsp olive oil 🍃 - 1 tbsp appy fizz @feelthefizz 🍎 - pinch of salt and pepper 🧂 - fennel fronds, roughly broken by hand( from my terrace garden) 🍃 Give it a good shake. Fold the salad by hand with the dressing and some more fennel fronds. I can’t wait to make the same with the fennel bulbs when they are ready. I do not add any lemon 🍋 or citrus in the dressing as green apple and appy fizz add the tartness/tanginess. This is such a simple and refreshing salad and one of the easier ways to eat fruit. You can always replace fennel with the herb of your choice - mint, and parsley will pair well. Use your regular potato peeler and shave cheese 🧀 on it if you like. . . This is also the first time I am taking part in a contest thanks to @kishiarora who saw this on @masterchefmom’s feed. And told me, Mom, why don’t you come up with something fun. 💚#Repost @kishiarora with @get_repost ・・・ Because I love spinach, Mother cooked Spinach and lentils/ Keerai Kootu. 💚 RECIPE 🌱 ☘️Boil 1/4 cup of Mung Dal.🌱 ☘️Roughly chop around 2 cups of spinach leaves. Heat and wilt then in microwave or a pan with little salt, hing and few garlic pods. 🌱 ☘️Prepare a dry masala by roasting some coconut, red chilli, black pepper and cumin seeds and grinding them. 🌱 ☘️In a pan, mix the spinach and the masala. And use a ‘madani’ and churn this by hand. 🌱 ☘️Mix the lentils to this and bring it to a boil. Check again for seasoning. 🌱 ☘️If you desire, you can add tempered urad dal and red chilli. Sometimes it’s the mistakes that turn out to be the best part of the meal. A few months back, I made upma by mistake using polenta. I roasted the polenta just like Rava/sooji and then sautéed some veggies with rai- kadi patta- pyaaz tadka and added water in the end. My daughter @kishiarora was the one who first introduced me to Polenta. She makes a gorgeous lemon rosemary polenta cake with rosemary. (swipe left) And she finished making a couple for her orders and forgot to put it away. Here is the excellent mistake - Polenta Upma that my kids love now. We had it for lunch today. Summers drinks 🍹 Come summers, and temperatures begin to soar high leaving daughter feeling fatigued. Staying hydrated is an essential factor to keep functioning in this sweltering heat and maintain good health. I make a lot of different varieties of drinks for her - Bel sharbat, aam panna, shikvanji, pudhina nimbu pani, jaljeera, coconut water, water melon juice, mango shake, various kinds of iced teas with sabja/chia seeds, roohafja with gond katira and then these too sharbats. 💕#dinnerfortwo While I make lunches, my daughter @kishiarora pretty much makes the dinners. This salad is inspired and adapted from @justagirlfrommumbai ( check her feed and blog for the recipe) Kishi replaced the sweet potato 🍠 with pumpkin 🎃 and added onion to the roasting mix. Subtle sweetness in the salad from roasted beetroots in a little foil pouch. The dressing is a pesto -mix of coriander and pabri (Thai basil variant)lots of lemon juice, parmesan, evoo, pinenuts and a clove of garlic with seasoning. She used roasted pine nuts as a garnish too for texture. Whatever she makes I enjoy while watching my TV. Monday is going well 💕 . . . What are you having for dinner?
