The day after Christmas... Kind of a weird day. The celebrations are over, but there are leftovers in the fridge. Leftovers that you don't really want. You're shopped-out, but there are amazing after-Christmas deals to be had everywhere and there's bound to be something Santa forgot to leave under the tree. So what do you do?
Grab some Starbucks, hit the stores early, get your few last must-haves (okay, okay, wants), swing by for a quick lunch and get out to nature. Or at least that's what we did today.
My wife and I joined my in-laws for an awesome several-mile hike around Poinsette State Park right here in Sumter, SC. Technically, I think it's in Wedgefield, but close enough to home that we like to call it our own.
It was an amazingly beautiful day after a week of steady rain... Cool, clear and sunny. Perfect for hiking. And, considering we took the wrong trail and ended up hiking for a bit longer than we had planned, the crisp December day was a welcome surprise.
We found a phone and left a note where we picked it up in hopes the owner would find it. He did and he called and we reunited him with his beloved Samsung Galaxy. Turns out, he just moved down from Chicago and is working at a local restaurant and, as a thank-you, invited us to come see him at work for a little something special. We haven't taken him up on it just yet because, well... leftovers. Yeah, fight it all you want, but day-old holiday food just tastes better than it did the first time around. Or at least it did for us after several miles in the woods.
Now, to have a nap until it's time to ring in the New Year. Let's see what 2015 holds...

On Halloween 2013, my wife and I signed the papers on our very first home. Just a few days later, we found out my mom had an extremely aggressive form of Pancreatic Cancer. Needless to say, we spent Christmas with her that year instead of celebrating in our amazing new (to us) house. I don't say that with any regret or disappointment. I'd have given up 100 Christmases at home to be with my mom if I knew each one would be the last.
Mom passed away on February 1 of this year (2014). It's been tough losing her. Especially when it's dark and quiet and I'm left to my thoughts. There are just so many things I'd love to say. Sometimes I do. I have faith she's hearing me, but at the very least, the walls hear me, and that's okay too.
This year, my wife and I decided that we were going to spend Christmas at home. Our home. Anyone that wanted to join us was welcome, but I wasn't going anywhere. The holidays took their toll on us last year so we spent the day binging on episodes of American Horror Story III, cooking, drinking mimosas, eating ham sandwiches (one of my steady clients got us a ham for Christmas) and reminiscing about our life together and my mom. We laughed and cried, joyful that our Christmas dinner came together damn-near perfectly, but slightly disappointed that my mom, the only person we know who would actually appreciate the real leaded crystal glasses, Spode Christmas Dishes and tiny tree, wasn't here to see it.
But we found peace in knowing that somewhere, she was watching over us, sending us her Christmas wishes in the form of beautiful sunshine and cool, crisp air; the first in days. And we found peace in each other, for that is what we promised to do when we said our vows to one another.
We veered from the traditional stuffed birds for dinner and went southern style with a beautiful roast beef, vegetables, mashed potatoes and gravy (the gravy was a bit of an experiment for me as I'd never done it before, but it turned out okay), macaroni and cheese, green bean casserole and, of course, a little something for dessert. It wouldn't be Christmas without some sweets, would it? Fortunately for us, my amazing in-laws stopped over to eat (actually, my mother-in-law brought the "G.B. Cass," as she calls it) and we had an incredible dinner with them by our first Christmas tree in our new home.
This time of year will always feel just a little bit empty without mom, I guess. But I have an amazing support system in my wife and family and I have a damn-fine recipe for a rosemary roast beef that will knock your socks off. So I guess Christmas will go on. And perhaps mom will grace us with her presence from year-to-year in the form of a hint of sunshine on such a joyous holiday.
From my family to yours, Merry Christmas and may the new year bring with it happiness, hope and grace.

I grew up in a family that celebrates life with food. Births, deaths, weddings, holidays... You name it. If it's worth celebrating, we're doing it with food. Lots of it. I come from the South so naturally, we take things that shouldn't be bad for you and transform them into something that should have a Surgeon General's warning.
A few years ago, my dad gave us a grill. It wasn't my first grill, but it was far nicer than any of the little grocery store tailgating charcoal bowls I had in my bachelor years. Being new to proper grilling, I started binge-watching Food Network grilling shows for inspiration.
In the last couple of years, I've become quite good at it and the grill has become my go-to platform for family dinners and backyard get-togethers.
Those guys up there are called "Dino Eggs," but my wife doesn't like that name so I think I'll just refer to them as "Awesome Chicken Roll-Ups."
Basically, they're cheddar cheese-stuffed jalapeños wrapped in chicken, then wrapped in bacon and smothered with barbecue sauce. I whipped up a little house-made honey mustard using dijon mustard, local honey and worcestershire sauce for dipping.
Grill 'em over indirect heat at 350-375° for about an hour or so and give 'em a little bbq love every 20 minutes or so to get that yummy, sweet-sticky glaze you know you love.
Pair 'em up with some mashed potatoes and your favorite veggie (I went with asparagus because it's great on the grill) and some sautéed mushrooms and you've got yourself a meal good enough to make you wanna slap your momma.

On February 1, God's need for my mother became greater than our own and she lost her 4-month battle with cancer. She loved Crepe Myrtles, and I can't ever remember living in a home without at least one in the yard. So, it only seemed fitting that the home she helped my wife and me buy, have a Crepe Myrtle in the yard. It started blooming this week, and it's such a brilliant shade of fuchsia. I know that my mom is watching over us and I like to think that her light continues to shine on through us.
