Tofu Curry Salad
Lazy Tuesday Bowl. You can throw a bunch of veg into your rice cooker (on top of the rice), and even add sauce, for a truly one-pot meal. However, tonight’s thing was a one pot, one pan meal, because I roasted the broccolini topping separately.
Monday Nite Splat, Cheezy Grits with Roasted Tomatoes.
Ahhh…soba! And ooooh…mami! With broccolini, toasted garlic, chili flakes, orange-teriyaki sauce and toasted sesame seeds. Super Tuesday night meal!

Frequently, my meals look like a big sloppy splat. I like splats! They’re stewy, warm, savory and comforting; what’s not to like? Tonight’s splat is Tofu Chile Verde with Refried Beans. (I tweaked Milk Street’s Chicken Chile Verde recipe.) P.S. Splats make the best leftovers, even better than Day 1.
