Ingredients: 1 cup all-purpose flour. 2 tablespoons granulated sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup Greek yogurt. 1/2 cup milk. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup chocolate chips. Butter or oil for cooking.
Instructions: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, combine the Greek yogurt, milk, egg, and vanilla extract. Mix until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Gently fold in the chocolate chips into the pancake batter. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil to grease the surface. Pour 1/4 cup portions of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip the pancakes and cook until golden brown on both sides. Remove the pancakes from the skillet and keep them warm. Repeat the process with the remaining batter, adding more butter or oil to the skillet as needed. Serve the Chocolate Chip Greek Yogurt Pancakes hot with your favorite toppings, such as maple syrup, fresh fruit, or additional chocolate chips.
