Ingredients: 2 large sweet potatoes, peeled and cubed. 2 tablespoons olive oil. 2 tablespoons honey. 1 teaspoon ground cinnamon. Salt and pepper to taste. 4 cups mixed greens e.g., spinach, arugula, and kale. 1/2 cup crumbled feta cheese. 1/4 cup chopped pecans. 1/4 cup dried cranberries. Balsamic vinaigrette dressing.
Instructions: Preheat your oven to 400F 200C. In a bowl, combine the olive oil, honey, ground cinnamon, salt, and pepper. Toss the sweet potato cubes in the honey-cinnamon mixture until they are evenly coated. Spread the sweet potatoes out on a baking sheet lined with parchment paper in a single layer. Roast in the preheated oven for about 25-30 minutes or until the sweet potatoes are tender and caramelized, flipping them halfway through. While the sweet potatoes are roasting, prepare the salad. In a large salad bowl, combine the mixed greens, crumbled feta cheese, chopped pecans, and dried cranberries. Once the sweet potatoes are done roasting, let them cool slightly. Add the roasted sweet potatoes to the salad bowl. Drizzle with balsamic vinaigrette dressing and toss everything together gently to combine.
