This easy keto-friendly buffalo ranch chicken sheet pan dinner tastes great and doesn't have any carbs. Adding spicy buffalo sauce and creamy ranch dressing to juicy chicken breasts and roasted vegetables makes them taste better.
Ingredients: 4 boneless, skinless chicken breasts. 1/4 cup buffalo sauce. 1/4 cup ranch dressing. 1 tablespoon olive oil. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1 teaspoon paprika. Salt and pepper to taste. 1 head of cauliflower, chopped into florets. 1 large zucchini, sliced. 1 bell pepper, sliced. 1 tablespoon chopped fresh parsley for garnish.
Instructions: Preheat oven to 400F 200C. In a small bowl, mix buffalo sauce, ranch dressing, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Place chicken breasts on a sheet pan lined with parchment paper. Coat each chicken breast with the buffalo ranch mixture. Spread cauliflower florets, zucchini slices, and bell pepper slices around the chicken on the sheet pan. Drizzle any remaining sauce over the vegetables. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender. Garnish with chopped fresh parsley before serving.
