5 am is the right time to make pasta carbonara from scratch right
I wanted additional toppings so I used some of the bacon fat and red wine to make a reduction to saute mushrooms and baby spinach in

honestly thats fair. I got that classic ADHD-driven-shitty-polymath thing goin on so i should really put a faq somewhere of all the wild shit im up to
@msylem honestly it’s not really much of a recipe u just take ur basic pasta carbonara (hot pasta into a mix of eggs, parm, and black pepper, topped with garlic-cooked pancetta, or bacon as the case may be) and then add w/e toppings you feel will taste good in there. I know there should probably be parsley in there but i only have the dried stuff.
After reserving most of the bacon grease for other stuff, I deglazed the pan with some red wine and tossed some mushrooms and baby spinach in that, adding a touch of pesto to the veggies to finish and throwing the whole mess into the pasta.
I like to use pasta carbonara as a base recipe bc it works with a bunch of other ingredients’ flavour profiles, but I’m sure there are some of my followers who are Italian who may be pissed at me for fucking with the recipe. I sorta play fast and loose with anything I cook and my mom’s long accepted my annotations and nonsense to our Chinese family recipes
