There's no way I could make everything on this list in a single week, but I wanted a list of new ideas and old favorites. I'm thinking about doing a week of meatless dinners centered on tofu. I could call it a tofu bacchanal, or maybe tofu a-go-go?
Toasted Coconut Rice Salad sounds fabulous. Can't wait to try it.
Also looking very forward to having Cabbage Parm again, made with Marcella's sauce, of course.
N said yesterday that he would happily eat a hearty salad with a protein on it for dinner at least three nights a week, so I am taking that to heart this summer (and beyond).
I love (and have made) white kimchi, and now I want to try water kimchi because it sounds lovely for summer.
I want pasta every day and have to talk myself out of having it every night for dinner. I would like to try Spicy Tuna Udon, the one meat item on this week's list.
And this Caramelized Cabbage and Miso Butter Pasta (laying aside the "period" part of it, which I haven't researched and cannot confirm, it does sound delicious.)
And this Peas & Cheese pasta, which will be the fourth version of Very Green Pasta we'll have tried—so far including kale sauce pasta, basil-cottage cheese pasta, and broccoli sauce pasta. I would rate them very decidedly in that descending order, by the way, from best to least.
I'd like to try a different kind of baked potato, so this week I may make English Jacket Potatoes instead of doing them the usual way. As for what to put inside? Maybe miso-creamed kale with mushrooms (SO DELICIOUS)? Or maybe just steamed broccoli and cheddar?
Intrigued by this Tofu Schnitzel with Buttermilk Slaw, especially since I still have most of a half-gallon of full-fat buttermilk in the fridge that needs using up.
And also thinking these Crispy Tofu Nuggets sound great, maybe tucked inside a flour wrap with some lettuce and/or cucumbers and/or sauce (hoisin or peanut or sweet chili?)
I haven't tried this Breakfast Tofu Scramble, but it sounds delicious, like it might well be a plausible substitute for maple-sage breakfast sausage. If it works, I might treat it like my SIL does: mix the cooked "sausage" while still hot with a block of cream cheese, then sandwich that filling between two unrolled sheets of crescent roll dough, and bake it up into handheld biscuits-and-gravy pastries.
I love Creamy Lettuce Soup for breakfast, with a squeeze of lemon, a few drops of truffle oil, and a spoonful of crème fraîche swirled in. I'd like to have that this week.
