Banana & Cashew Butter Cake (GF)

Banana Cake is a family favourite in our house. This week I used my base recipe and added some of our new Cashew Butter. The result was incredible.

YOU WILL NEED...

4 Free range eggs at room temp

1/4 cup raw honey/maple syrup/rice malt syrup (I used honey this time)

125gm organic butter at room temp. I use ORGANIC TIMES

3 tablespoons Paleo Pure Cashew Butter (can swap for other nut butter)

1 & 1/4 cup organic banana flour. I use Ethical Foods brand.

1 teaspoon ground cinnamon

1 teaspoon ground dried ginger

1 teaspoon alum free baking soda. I use Bob’s Red Mill

3 ripe bananas (2 for mashing and one for decoration on top)

1 cake tin

HERE’S WHAT YOU DO...

Preheat your oven at 190 degrees C & grease/paper line your cake tin.

I used my Magimix Cook Expert on speed 8, cream the better for 2 mins or use a hand beater and a bowl on medium speed until butter is creamy.

Add 1/4 cup honey/maple/RMS and continue to blend at same speed for another 2 mins scraping down the sides.

Add 1 egg at a time while beating until all combined.

In a sep bowl, combine your dry ingredients and mix well.

Add the dry ingredients to the batter and mix on speed 8 for another 3-4 mins scraping down the sides.

Add the Cashew Butter and mix.

In a separate bowl, mash 2 bananas with a fork and mix this also through the batter.

Pour the batter into the cake tin and decorate with the 3rd banana. 

Bake in the oven for 30 - 35 mins or until cooked through.

Allow to cool right down before popping out of tin.

Forget spending a stack of money buying nut mylk at the store containing numerous additives & stabilisers and not much “nut”, when you can make it yourself in just minutes using a jar of our organic, hand churned nut butter! 

HERE’S WHAT YOU NEED

1 Jar organic Nut Butter (your choice), I used both Paleo Pure Almond and Cashew separately.

1 High speed blender. We have a commercial one but even a Nutri Bullet will be great.

1 Glass bottle to store mylk in

2-3 pitted prunes or dates or sweetener of your choice (optional)

Filtered Water

HERE’S WHAT YOU DO

Pour 1 litre of filtered water into the blender

Spoon in your desired amount of nut butter. *Note - most nut mylks on the market range from a creamy 10% down to a watery 3%. As a starting point, go for 60 grams, or about 3 tables spoons. Adjust to your personal taste next time.

Drop in the prunes

Pop the lid on the blender and blitz for 2 mins on high.

After you have finished blitzing, your nut mylk will have a layer of fluffy foam on top. Spoon this off and discard, making pouring tricky.

Pour the mylk into your glass bottle and store in fridge.

Will last about 5 days. Give a shake before drinking.

PS If you want to get a little fancy, try adding 1 table spoon or raw cacao and 2 teaspoons of maple syrup for a heavenly, chocolatey drink!
