I created this recipe back in 2014 when I did the #AIP for a brief time and wanted something salty and crunchy (since I couldn't eat nuts or seeds). I took many road trips with these through the FL Keys, dipping them into my reina pepiada (Venezuelan chicken avocado salad) and would even take that pairing to work at the University of Miami Med School for a filling lunch.
