Course 5 - seared ling cod, farrotto, parsnip and carrot, crumbled andouille, parsley pesto. A dish that appears simple, but is simply perfection. Perfectly seared, well seasoned, buttery sweet and slightly savoury w the andouille crumble.

Course 6 - milk poached chicken carrot and celery root, puffed wild rice. Did you know this chicken came all the way from Heart Rock Ranch in Carstairs, Alberta? Hayloft does a superb job of sourcing proteins within a short drive of Airdirie.

Course 7 - dry aged pork leg, red wine demi glace, pear purée, caramelized onion purée, turnip, sprouts. So tender, Juicy, and perfect. Love the hit of fresh spice from the sprouts.

Course 3 - gnocchi with crab and tarragon cream. So glad Jugger included gnocchi in this tasting menu as it would have most definitely been my a la carte selection!

Guys. I'm full to the brim with food, drink, and happiness. I want to thank everyone who sent birthday wishes and went out of their way to make 42 extra special. I couldn't have asked for a more epic birthday dinner at Hay Loft Restaurant in Airdirie. Chef Jugger really killed the tasting menu tonight! Beef Tartare with empire provisions Lardo on a puffed pork crackling and grated cured yolk. I can't describe how happy this dish made me.
