Teriyaki Baked Tofu is a delicious and protein-packed vegan dish that's perfect for a satisfying meal. The tofu is marinated in a homemade teriyaki sauce, then baked until crispy on the outside and tender on the inside.
Ingredients: 1 block extra firm tofu, pressed and drained. 1/4 cup soy sauce. 2 tablespoons maple syrup. 1 tablespoon rice vinegar. 1 clove garlic, minced. 1 teaspoon grated ginger. 1 tablespoon cornstarch. 2 tablespoons water. Sesame seeds and chopped green onions for garnish.
Instructions: Preheat the oven to 375F 190C. Cut the pressed tofu into cubes or slices and place them in a single layer on a baking sheet lined with parchment paper. In a small bowl, whisk together soy sauce, maple syrup, rice vinegar, minced garlic, and grated ginger to make the teriyaki sauce. Pour half of the teriyaki sauce over the tofu, ensuring each piece is coated evenly. Reserve the other half for later use. Bake the tofu for 25-30 minutes, flipping halfway through, until it's golden and slightly crispy. While the tofu is baking, mix cornstarch and water in a small bowl to make a slurry. In a small saucepan, heat the reserved teriyaki sauce over medium heat. Once it starts simmering, stir in the cornstarch slurry. Cook for 1-2 minutes until the sauce thickens. Once the tofu is done baking, drizzle the thickened teriyaki sauce over it. Sprinkle with sesame seeds and chopped green onions for garnish. Serve the teriyaki baked tofu hot with your choice of rice or vegetables. Enjoy!
