Ingredients: 4 beef fillet steaks 8 oz each. Salt and black pepper to taste. 2 tbsp olive oil. 1 cup Gorgonzola cheese, crumbled. 1/2 cup heavy cream. 2 tbsp unsalted butter. 2 cloves garlic, minced. 1 tsp dried thyme. Chopped fresh parsley for garnish.
Instructions: Warm up the grill over medium-high heat. Add salt and black pepper to the beef fillet steaks and brush them with olive oil. For medium-rare, grill the steaks for 4 to 5 minutes on each side, or until they're done the way you like them. Melt the butter over medium-low heat in a saucepan. Put in the minced garlic and cook until it smells good. Turn down the heat and add the Gorgonzola cheese. Mix it in until it melts and is smooth. Add the heavy cream and keep stirring the sauce until it gets thicker. Add the dried thyme and stir for another one to two minutes. Take the steaks off the grill and give them a minute or two to rest. Place the fillets on a plate and pour a lot of the Gorgonzola sauce over them. Add chopped fresh parsley as a garnish and serve right away.
