This recipe combines the strong flavors of blackened salmon with the bright and refreshing flavors of citrus salsa to make a dish that is both tasty and colorful. The citrus salsa gives the salmon a burst of freshness and tanginess, and the blackening seasoning gives the salmon more depth.
Ingredients: 4 salmon fillets. 2 tablespoons olive oil. Blackening seasoning paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper. Salt and pepper to taste. 1 orange, peeled and diced. 1 grapefruit, peeled and diced. 1 lime, peeled and diced. 1/4 cup red onion, finely chopped. 1 jalapeno, seeded and finely chopped. 2 tablespoons fresh cilantro, chopped. 1 tablespoon honey. Juice of 1 lime. Salt to taste.
Instructions: Add salt and pepper to salmon fillets and rub them with blackening seasoning. In a pan, heat the olive oil over medium-high heat. Put the salmon fillets in the pan with the skin side down. Cook for 4 to 5 minutes, or until the skin turns black. The salmon fillets should be cooked through after being turned over and cooking for an extra 3 to 4 minutes. Cut up orange, grapefruit, lime, red onion, jalapeno, cilantro, honey, lime juice, and salt and put them in a bowl. This is how you make citrus salsa. Put the citrus salsa on top of the pan-seared salmon that has been blackened.
