Recipe via the link in profile! 👨🏻🍳 I originally called this the Matt Salad because @matthewlud came up when it, but I think maybe it should be called the remix salad because... 🥗 You can replace the kale with any dark leafy green; the white beans with the pulse or legume of your choice (I like chickpeas and lentils!); the charred tempeh with charred tofu or the protein of your choice (I have a thing for "beyond chicken"...); and you can top it with any kind of nut or seed (it uses sunflower seeds & sesame seeds but hazelnuts, hemp seeds, whatever, would be great!), and you can change up the oils and acid in the dressing (I've been doing it with a tahini miso dressing and it's soooo good)! 💡 And as if those aren't enough ideas you can also make a huge batch & eat it throughout the week in different forms: heated in a skillet and topped with an egg for breakfast, a soup, in a wrap.
