Best Chicken & Rice Casserole Ever!
I totally stole this recipe from a book at an assisted living facility I worked at several years ago. It wasn't a copyrighted, published book; it was in binder full of recipes someone typed up on a computer. I don't know who came up with this recipe but it is sooooo good!!!
I usually skip the broccoli, slivered almonds, & salt, and I use plain yogurt instead of sour cream. I do top the casserole with chips, but no certain kind. Tonight, I am using BBQ chips. And I usually add a layer of cheddar cheese just before it's finished baking. This recipe can also be easily cut in half; I usually make the full recipe, divide it into several smaller pans, & then freeze them for later.
6 cups cooked chicken
6 cups cooked rice
1 medium onion, diced
3 cups chopped celery
1 26-oz can of cream of mushroom soup
1 10-oz bag of frozen broccoli (optional)
1 cup slivered almonds (optional)
1/2 soup can of water
1 cup mayonnaise
1 cup sour cream
1/4 cup lemon juice
2 tsp salt
Mix all ingredients together. Divide and spread into two 9x13 casserole dishes. Just before baking, top with crushed potato chips, if desired. Bake at 350 degrees for 1-1/2 hours.
*2 cups uncooked rice yields 6 cups cooked.
