Chicken katsu is a versatile dish that you can make into pretty much anything! Enjoy it with rice, on donburi, in a sandwich, with curry... the list goes on! Tender chicken thigh coated in a thick and crunchy layer of panko breadcrumbs and fried to perfection, then drizzled with a delicious homemade katsu sauce. Every crunch is gonna have you dancing in your seat!

𝙂𝙞𝙛𝙩𝙚𝙙 🍔 @mymapleandco have launched Maple Street Eats, a new delivery service with a menu of “feel good” food. It’s healthy, natural comfort food with vegetarian and vegan options plus dairy-free and gluten-free dishes. Usually me and healthy don’t bond together, but I was really surprised at how good these dishes were! The Mac & greens was a brilliant twist on Mac & cheese. You’ve still got the essential components but with additions; kale, broccoli and mangetout, topped with crispy herb breadcrumbs. The chicken Katsu curry is Crispy chicken with homemade Japanese katsu curry sauce, pickled cucumber, pink ginger, and brown rice. If you’re so used to having white sticky rice with your curry then it will take some getting used to, but it’s a brilliant healthy alternative. Lastly there’s the buffalo chicken burger. Grilled chicken thigh, buffalo hot sauce, smoked applewood cheese, garlic mayo, rainbow slaw, tomato, gherkins. For a healthy alternative this was pretty good tbh! Don’t get me wrong, if you’re looking for a fried chicken burger then I’m not trying to pull the wool over your eyes and say get this, but the tag of “healthy” usually means it’s not actually that enjoyable, but this was. There’s a handful of locations available now; Hammersmith, kings cross, Fitzrovia, Aldgate. Exciting things have been happening. Looking at all of these pictures from the last week makes me realize how busy I’ve been 😰!!

Ran 5.5 today with my friend who’s training for a half in March that I’m also running.

Met a new doggo named Gage that someone I know adopted and I’ll dog sit soon 🤗🤗

Went to the eye doctor (💸💵💰goodbye money) without vision coverage for the first time 😞.

Been cooking up a storm too (Katsu Chicken with Jasmine Rice).
