These cocktail meatballs with sweet and sour sauce are a perfect appetizer or party dish. The combination of tender meatballs and tangy sauce will surely delight your taste buds.
Ingredients: 1 lb ground beef. 1/2 cup breadcrumbs. 1/4 cup milk. 1 egg. 2 cloves garlic, minced. 1/4 cup finely chopped onion. Salt and pepper to taste. 1 cup pineapple juice. 1/2 cup brown sugar. 1/4 cup apple cider vinegar. 1/4 cup ketchup. 1 tablespoon soy sauce. 1 tablespoon cornstarch. 1/4 cup water. Sliced green onions, for garnish.
Instructions: Preheat oven to 400F 200C. In a bowl, mix together ground beef, breadcrumbs, milk, egg, garlic, onion, salt, and pepper until well combined. Roll mixture into small meatballs and place them on a baking sheet lined with parchment paper. Bake meatballs in the preheated oven for 15-20 minutes or until cooked through. While meatballs are baking, prepare the sweet and sour sauce. In a saucepan, combine pineapple juice, brown sugar, apple cider vinegar, ketchup, and soy sauce. Bring to a simmer over medium heat. In a small bowl, mix cornstarch with water until dissolved. Stir the cornstarch mixture into the saucepan. Continue to cook the sauce, stirring constantly, until it thickens, about 2-3 minutes. Once meatballs are cooked, remove them from the oven and place them in a serving dish. Pour the sweet and sour sauce over the meatballs, coating them evenly. Garnish with sliced green onions before serving. Enjoy!
