Ingredients: 1 lb ground beef. 1/2 cup diced onion. 1/2 cup diced bell pepper. 1/2 cup corn kernels frozen or canned. 1/2 cup black beans canned, drained, and rinsed. 1 cup barbecue sauce. 1 tsp chili powder. 1/2 tsp cumin. 1/2 tsp garlic powder. Salt and pepper to taste. 12 slider buns. 1 cup shredded cheddar cheese.
Instructions: In a skillet, brown the ground beef over medium-high heat. Drain excess fat. In a slow cooker, combine the browned beef, diced onion, diced bell pepper, corn kernels, and black beans. In a small bowl, mix together the barbecue sauce, chili powder, cumin, garlic powder, salt, and pepper. Pour this sauce over the beef and vegetable mixture in the slow cooker. Stir to combine. Cover the slow cooker and cook on low for 4-6 hours, or until the flavors meld together and the vegetables are tender. When ready to serve, scoop a generous portion of the beef and vegetable mixture onto each slider bun. Top with shredded cheddar cheese and place the bun's top half.
