So I prepped this wondrous beauty from the Costco meat market before I went to bed last night. Tucked her to bed in foil in the fridger. I’ll wake her up at least an hour on the counter to come up to room temperature. Get a 2.5 minute sear on each side in a grape seed oil oven safe pan preheated till you see a lil smoke wift up from the heated grape seed oil. You want a good crust so shake the pan just so so to make sure she’s not sticking. I preheated my pellet smoker to 275 where the hot pan will go after total of 5 minutes gets me a good crust on both sides. I’m gonna meat probe this Ribeye and place it in the smoker, pan and all. Leave it alone until it hits about 165. Pick your doneness temp when you try this at home. Once it hits 165’ish I’m gonna take her to the kitchen, place my dinner on a cutting board and let her rest for 10-15 minimum. For this dinner I’ll slice into cubes and toss is a green salad. Yum!
