Im back! its been a long time since posting my recipes but here we go again! <3

It's another rainy cold day perfect for lazy soup . The girls can add cheese , Avocados , organic tortilla chips, sour cream , salsa etc and have a nutritional immput in their nutritional choices . This soup is so delicious 😋 for the grown ups I just trow in some Sriracha and we are good to go . I like serving it on a bed of oven baked rice . This soup keeps for a week but never makes it that long .
2 cans organic black beans rinsed
3 stalks of celery chopped
1 red pepper chopped
3 large mushrooms ( optional)
1 small red onion
2 small sweet potatoes peeled and sliced ( or carrots)
2 cups frozen corn
1tsp cumin
Salt to taste
1 bayleaf
Olive oil optional as garnish .
1 carton of organic veggie broth from trader joes
Cut up everything , I use the food processor slicer on everything except celery .
Saute onion and other veggies in a few spoons of broth or oil if you like. Add the broth cornand beans and cook on slow for 25 minutes , I keep it simmering forever and keep feeding everyone until it's all gone .
