Yesterday while my kids ate McDonald’s, I snaffled in @leonrestaurants rainbow vegan salad to eat 🌈 it was totally delicious! But as I sat the eating (worrying I was going to be caught) and taking in all the wonderful colours in my salad I thought to myself “I can make something like this for work” It probably won’t taste quite as good as Leon Restaurants salads but for a packed lunch I’m sure it will be good! So this after I have stocked up on all the veggies and spending the afternoon prepping and boxing up my ingredients that I can use to build myself a salad each day for work. All the ingredients will be vegan and of course gluten free!
